"Happy Birthday" is a song that every pianist should have in his or her repertoire. You never know when you might be asked to play it!
This lead sheet version is easy enough for first-year students to play, and the format allows your more advanced students to embellish to their heart's content and make the song their own by trying different accompaniment patterns and adding an introduction or coda.
